Why shouldn't you be able to do that? Just boot on the new ext3-enabled kernel
and it should work 100%. If it for some reason barfs about it having
been run as ext2 for a while (can't see why it should), you can convert
it to and from ext3 without having to umount anything - see
http://people.spoiled.org/jha/ext3-faq.html.
